Pachadi is an absolutely delicious recipe for beets and yogurt. This is another dish that Prabha has brought to us from her native Kerala.
Ingredients:
- Julienne or grated beets..................1 cup
- Julienne or grated cucumber...........1/4 cup
- Fresh Plain Yogurt...........................3 tbs
- Ghee or olive oil.............................1 to 2 tbs
- Cumin, crushed.............................1/4 tsp
- Green, chilies, chopped.................1/4 tsp
- Ginger, chopped............................1/4 tsp
- Curry leaves...................................1 sprig
- Turmeric powder............................one pinch
- Cooling Soma salt.......................................1/4 tsp or to your taste
Method
- Heat the ghee or oil in a medium frying pan. Add Cumin seeds, chilies, ginger, curry leaves and turmeric.
- Saute on medium flame until things begin to brown. Add the beet and 2 tbs of water, mix, cover and steam until the beets had cooked through, about 5 minutes.
- Add the cucumber and mix, turn off the heat.
- Mix the yogurt with a fork to smooth. Add the yogurt, salt and mix.
