Avial is a traditional dish from Kerala. It is a delicious curry with Coconut and Tamarind.
Ingredients:
- Edos aka Taro Root
- Tindora
- Sweet potato
- Zucchini
- Beet root ( will change the whole dish pink/red )
- Lauki squash
- Carrot
- Green beans
- Drumstick vegetable
- Cauliflower etc.
If you don’t have all these items listed above, use what you have.
Cut the above ingredients into even pieces. Altogether they should equal 3 cups.
These ingredients should be coarsely ground together with a little warm water:
- Shredded coconut …..................................................................1/2 cup
- Cumin …....................................................................................1 flat tsp
- Turmeric …................................................................................1/2 tsp
- green chilies …..........................................................................2 small
- ginger chopped …......................................................................1/2 tsp
- curry leaves …...........................................................................1 stem
- cooling soma salt ….................................................1 tsp or to taste
- Tamarind (shelled, pitted and vein out)...................................... 3 pods
Instructions:
- In a big flat pot add all the veggies, the coarsely ground ingredients and 2 cups of water, bring to a boil and cover.
- Simmer. add more water if needed to keep the pieces covered and cooking. Turn off after 30 minutes. Great with warm rice and fried Paneer.
